Ingredients

  • Mutton: 1 kg
  • Onion: 2 medium-sized
  • Ghee: 1 cup
  • Salt: 1 tsp
  • Ginger Garlic Paste: 1 tbsp
  • Red Chilli Powder: 0.75 tbsp
  • Coriander Powder: 1 tbsp
  • Turmeric Powder: ½ tsp
  • Water: ½ cup
  • Black Cumin: 0.75 tbsp
  • Wheat Flour: ¼ cup
  • Almonds: 5
  • Water: ½ cup

    Yakhni (Broth):

  • Goat Trotters: 2 pcs
  • Water: 750 ml
  • Ginger Garlic Paste: ½ tbsp
  • Ghee: 2 tbsp

 

Method

  • Prepare the Yakhni (Broth):
    • In a pot, add 750 ml water, goat trotters, ½ tbsp ginger garlic paste, and 2 tbsp ghee. Bring to a boil and simmer for 1-2 hours to extract the flavors. Strain and set aside the broth.
  • Cook the Mutton:
    • In a clay pot (Matka), heat 1 cup ghee. Add chopped onions and sauté until golden brown.
    • Add ginger garlic paste and sauté until fragrant.
    • Add mutton, salt, turmeric powder, red chilli powder, and coriander powder. Mix well.
    • Pour 1 glass of water into the pot, cover, and cook on medium flame for 1 hour.
  • Roast the Mutton:
    • After 1 hour, increase the flame to high and roast the mutton for 3-5 minutes to enhance the flavor.
  • Combine with Yakhni:
    • Add the prepared yakhni (broth) to the mutton. Mix well and cook on low flame for another hour.
  • Prepare Almond Paste:
    • In a blender, add wheat flour, almonds, and ½ cup water. Blend to make a smooth paste.
  • Finish the Dish:
    • Add the almond paste to the mutton mixture, stir well, and cook for another 5 minutes until well combined and thickened.
    • Turn off the flame and sprinkle black cumin over the dish.
  • Serve:
    • Serve hot with roti or naan.
