  • Mutton Mince: 1 kg

  • Tomatoes (chopped): 3

  • Salt: 1½ tsp
  • Coriander Powder: 2 tsp
  • Yogurt: 1 cup
  • Cinnamon: 1 piece
  • Black Cardamom: 1
  • Green Cardamom: 4
  • Cloves: 5-6
  • Black Peppercorns: ½ tsp
  • Green Chillies: 4
  • Ginger Garlic Paste: 2 tbsp
  • Cilantro (chopped): ½ cup
  • Cooking Oil: 1 cup

 

Method

  • Prepare the Base:
    • In a skillet, heat 1 cup of cooking oil. Add garam masala (cinnamon, black cardamom, green cardamom, cloves, and black peppercorns) and fry for a minute until fragrant.
    • Add chopped onions and fry until they turn golden brown.
    • Add ginger garlic paste and sauté for a minute.
  • Cook the Mutton:
    • Add mutton mince and cook for 5-10 minutes until the color changes and the water evaporates.
    • Add coriander powder, red chilli powder, turmeric powder, cumin powder, garam masala, chilli flakes, and salt. Sauté well on high flame.
  • Add Tomatoes and Yogurt:
    • Add chopped tomatoes and cook until they are completely softened.
    • Add yogurt and fry for 5 minutes until the yogurt juice dries up.
  • Cook the Potatoes:
    • Add chopped potatoes and pour in half a cup of water.
    • Cover the skillet with a lid and cook on medium flame for 5-7 minutes until the potatoes are tender.
  • Garnish and Serve:
    • Garnish with chopped green chillies and cilantro.
    • Serve hot with naan or roti.
