Method

  • Preparation:
    • Boil water in a pan, add the brain (maghaz) to it. Stir, remove, and set aside to cool.
    • Clean the brain thoroughly.
  • Cooking the Brain:
    • In a pan, heat oil and add the cleaned brain. Mix well and cook it until lightly browned. Set aside.
  • Making the Masala:
    • In the same pan, add more oil if needed and fry the chopped onions until golden brown.
    • Add ginger, garlic, and green chili paste. Sauté well.
    • Add chopped tomatoes and sauté until they soften.
    • Add turmeric powder, red chili powder, salt, cumin powder, and ajwain. Mix well.
    • Add yogurt and sauté until the mixture is well combined and the oil separates.
  • Final Cooking:
    • Add the cooked brain to the masala mixture and mix well.
    • Pour in a little water and cook on low heat for 5 minutes to allow the flavors to meld.
