Ingredients:

  • Rice: 1 cup
  • Arhar Daal (Toor Dal): 1 cup
  • Water: 4 cups
  • Turmeric Powder: 1/2 tsp
  • Salt: 1/2 tsp (or to taste)
  • Oil: 1/2 tsp
  • Green Peas: 1/4 cup
  • Carrot: 1, cubed
  • Potato: 1, cubed
  • Ghee: 2 tbsp
  • Cumin Seeds: 1/2 tsp
  • Asafoetida (Hing): 1/8 tsp
  • Dried Red Chillies: 2
  • Onion: 1 medium, chopped
  • Green Beans: 2 tbsp, chopped
  • Curry Leaves: A few sprigs
  • Green Chillies: 2, slit
  • Cauliflower: 1/2 cup, parboiled florets
  • Ginger-Garlic Paste: 1 tbsp
  • Tomato: 1, chopped
  • Garam Masala: 1/2 tbsp
  • Amchur Powder (Dry Mango Powder): 1 tbsp
  • Fresh Coriander Leaves: For garnish

    Method:

  • Pressure Cook the Base:
    • In a pressure cooker, add rice, arhar daal, water, turmeric powder, salt, oil, green peas, carrot cubes, and potato cubes.
    • Put the lid on the pressure cooker and cook for 3 whistles on medium flame.
    • Remove the lid and mix well.
  • Prepare the Tempering:
    • In a pan, heat 2 tbsp of ghee over medium heat.
    • Add cumin seeds, asafoetida, and dried red chillies. Sauté for a few seconds until fragrant.
    • Add chopped onion, chopped green beans, and curry leaves. Sauté until the onions turn golden brown.
    • Add slit green chillies and parboiled cauliflower florets. Sauté for a couple of minutes.
  • Combine and Cook:
    • Add the cooked rice and dal mixture to the pan. Mix well to combine.
    • Add water as required to achieve your desired consistency.
    • Stir in the amchur powder and garam masala. Mix well.
    • Cook on low flame for 5-8 minutes, stirring occasionally, until the kichri thickens to a desired consistency.
  • Serve:
    • Garnish with fresh coriander leaves.
    • Serve hot with a side of yogurt or pickle.
