Ingredients

  • Boneless meat: 3 kg
  • Yellow lentil (Chaney): ½ kg
  • Onion: 3-4 medium size
  • Garlic cloves: 6-7
  • Ginger: 2 pieces
  • Black cardamom: 4 pieces
  • Black pepper: 1 tbsp
  • Green cardamom: 3-4 pieces
  • Red Kashmiri chilli: 4-5
  • Dry coriander: 2 tbsp
  • Cumin powder: 1 tbsp
  • Turmeric powder: ½ tsp
  • Garam masala: ½ tsp
  • Water: 3-4 glasses
  • Egg: 1
  • Green coriander: 3-4 tbsp (thinly sliced)
  • Mint: 3-4 tbsp (thinly sliced)

 

Method BY Regional Heritage Food

 

  • Cook the Meat and Lentils:
    • Take a pressure cooker and add meat, Channey, onion, garlic cloves, ginger pieces, black cardamom, black pepper, green cardamom, red Kashmiri chilli, dry coriander, cumin powder, turmeric powder, garam masala, and 3-4 glasses of water.
    • Saute well, then put the lid on the pressure cooker and cook on low flame for 28 minutes.
  • Prepare the Mixture:
    • After 28 minutes, fry the mixture well until it is completely crushed and mixed with the masalas.
    • Use a hard pestle to crush the mixture properly until you get a shredded mixture of all ingredients.
    • Take out the mixture in a bowl, add egg, green coriander, and crushed red chilli, and mix well.
  • Form and Freeze the Kebabs:
    • Make small balls from the mixture and freeze them in the fridge.
  • Fry the Kebabs:
    • Later on, fry the kebabs in oil until golden brown and serve with rice or naan.
